Gathering Café chef/owner Nathan Conkle features this dish as more evidence of his commitment to the “farm-to-table” ethos he’s championed since opening Gathering Café in a former bakery. His focus here, as with most of his dishes, is on fresh and local produce, combined with gentle cooking styles to let the natural flavors shine through. Gathering Café can be a cornucopia of comfort food with a healthy twist. It’s one of the few places in town where you can always count on old-time healthy favorites like kale, chard and farro being tucked into delicious lunches and dinners.
 
Ingredients:
 
Sauce:
• ½ cup red curry paste
• ½ cup cocoanut paste
• 1 tbsp. fresh cilantro
• 1 tbsp. freshly squeezed lime juice
 
Dish:
• ¼ cup zucchini squash, large dice
• ¼ cup carrots cut on a bias
• ¼ cup cooked and quartered Yukon Gold potatoes
• ½ cup quartered button mushrooms
• ½ cup shrimp
• ½ cup vegetable broth
 
Directions:
Combine and gently warm the sauce ingredients in a pan.
Combine the vegetables in a separate pan and begin to sweat them in olive oil
Add the shrimp, and cook to desired doneness.
Finish with vegetable broth.
Serve in bowl over cooked brown rice and the curry sauce; garnish with fresh cilantro sprigs, and fresh slivers of green onions.
