Ingredients:
• 1 lb ground beef
• 1 tbsp margarine
• 1 tbsp minced garlic
• 1 ounce yellow curry powder
• 1 ounce of beef bouillon (granulated)
• 1 cup fine diced white onions
• 1 cup chopped carrots
• 1 cup chopped celery stalk and leaves
• 4 large potatoes, peeled and cubed
• 2 cups tomato juice
• 4 cups hot water
• 1½ cups firm, diced Roma tomatoes
• 10-12 stalks green onions/scallions, small dice
 
Directions:
 
1. Brown beef in margarine; add bouillon, onions, carrots, and celery.
2. Blend together until beef is browned and vegetables are soft.
3. In a four-quart pan, bring potatoes to a boil.
4. Cook for approximately 15 minutes or until soft.
5. Drain and rinse. Once ground beef and veggies are ready, add tomato juice and hot water.
6. Bring to a boil and a temperature of 165 degree. Once desired temperature is reached, simmer and add Roma tomatoes and green onions.
