Ingredients:
• 1 1/2 lb. grass-fed beef
• 1 lb. black beans – soaked, rinsed, drained
• 1 large sweet onion
• 1 red bell pepper
• 2 large Beefsteak tomatoes
• 2 garlic cloves, minced
• 4 oz. green chilies
• 8 oz. tomato sauce
• 1 1/2 tsp. chili powder
• 1/2 tsp. Ancho chili powder
• 1/2 tsp. cumin
• 1/2 tsp. fresh oregano
• 1/8 tsp. Chipotle chili powder
Directions:
1. In a Dutch oven, brown the grass-fed beef; add bell pepper, onion and sauté until onion is tender.
2. Add all remaining ingredients. Simmer over low heat for 1 hour.
3. Transfer to slow cooker for 4 to 6 hours.
