Ingredients:
• 15 medium carrots peeled and diced
• 3 quarts milk
• 2 qts heavy cream
• Half of a red onion, diced
• One clove of garlic
• 1/2 tsp. minced fresh ginger
• 1/2 tsp. salt
• 1/4 tsp. pepper
 
Directions:
1. Sauté onions, carrots, ginger, and garlic on low heat for two minutes.
2. Add milk and cream
3. Cook on medium for 30-40 minutes, stirring occasionally.
4. Once carrots are fully cooked, purée.
5. Salt and pepper to taste
